Not so well known in Greece, the carrot cake but if you try it will become your favorite dessert. Fluffy, velvety and fragrant will be the perfect accompaniment to afternoon tea.
For the cake
3 cups. carrot (grated very fine)
1 cup. sugar
2 cups. flour, all-purpose
1 cup. corn
1 cup. almonds (chopped very much in Blender)

2 cups. icing sugar
3/4 cup. cream cheese
1. In a bowl add all the ingredients for the cake except the eggs and mix (either by hand or in a mixer) very well until a homogeneous mass (irrelevant the order in which we put the materials).

Three. Spread a form with ladokola that the brush with butter and a little flour and lay the cake. Bake at 160 ° C for about 45-60 minutes (keep the temperature low to avoid dry cake). 4. For the icing, beat the icing sugar with the butter and vanilla well and then add the cheese to the top half and then try the rest depending on how sour the want.
