Simple recipe with flavors that elevate chicken to another dimension.
4 chicken breasts
juice and zest of 2 limes
1 cup. chicken broth
2 tablespoons chopped fresh cilantro or
1 tablespoon dried cilantro grated
500 g. pleurotus mushrooms
2 cloves garlic
2 tablespoons chopped parsley
4 tbsp olive oil
1. Salt and pepper the chicken fillets and cook them on the grill with caution not to burn for 20 minutes.
Two. Spread the mushrooms on a baking sheet, sprinkle with olive oil, rub 2 cloves of garlic and sprinkle top, salt and pepper and bake at 180 º C for 20 minutes. 3. For the sauce put on low heat the chicken broth with the juice and zest of the lime and cilantro and simmer for 20 minutes until the sauce is reduced by half. 4. Serve the chicken on a plate, pour the sauce and garnish with grilled mushrooms.
