The success of this Lebanese recipe rests almost entirely on the marinade, which you can prepare beforehand and refrigerate for future use.
1/2 kg of deboned chicken from your local butcher
For the marinade
2 cloves of garlic crushed
1/2 tsp mixed spices
1/4 tsp ground cumin
1/4 tsp paprika
1/4 tsp chilli powder
2 tbsp tomato ketchup
2 tbsp lemon juice
2 tbsp oil
3 tbsp water
Preheat the oven to 170°C
Cut the chicken breasts in small cubes
Marinate the chicken cubes in all the above ingredients for at least 1/2 hour.
To cook, place the chicken with the juices in an oven tray, cover with foil and cook in the oven. After half an hour remove the foil and stir. Return the tray to the oven, uncovered for 5-10 minutes or until the chicken is well cooked.
