Simple and delicious, this rabbit with aromatic herbs is served with roasted potatoes.
- 1 rabbit
- 5 onions,sliced thin
- 150 gr finely chopped bacon
- 1 clove garlic
- 1/2 cup white wine
- 20 gr butter
- dairy cream
- 1 spoonful flour
- 2 spoonfuls oil
- ground rosemary and thyme
- finely chopped basil
- salt, pepper
Sauté the bacon, remove it from the frying pan and then brown the onions, garlic and rabbit (chopped in pieces) in the oil.
Add all the herbs – except for the basil -and add the bacon again.
Then add the wine, some water and let it cook.
When it is done add the dairy cream and basil and remove the rabbit.
The sauce is made firm with butter and flour.
