Lime and coriander are such a refreshing combination and truly complement the grilled chicken breasts with their flavor.
4 chicken breasts
2 limes, both the juice and the grated skin
1 cup chicken broth
2 tbs freshly chopped coriander
1 tbs dry coriander grated
500 g mushrooms
2 garlic cloves
2 tbs parsley, finely chopped
4 tbs olive oil
salt and pepper
Preheat oven at 180°C
1. Sprinkle salt and pepper on the chicken breasts and grill them.
2. Spread the mushrooms on a baking pan, sprinkle with olive oil, grate the garlic cloves and pour on top, sprinkle salt and pepper and bake for approximately 20 minutes.
3. For the sauce combine the chicken broth the lime juice, the grated lime skin and the coriander and boil on a low temperature for about 20 minutes until the sauce has reached half its original size.
4. Serve the chicken on a plate and pour the sauce on top then garnish with the baked mushrooms.
