Fresh Spinach with Smoked Pork

This recipe comes from the book of a Greek chef, Eleni Psychouli, called “26 chefs in 26 minutes” the point was to create a book with good recipes made fast.  Here is one of the salads. Enjoy!

Ingredients:

350g fresh spinach leaves
2 chives
45 stalks dill
40ml olive oil
½ tbsp vinegar
Seeds from ½ a pomegranate
150g smoked pork
Salt and pepper

Procedure:

  • Cut the pork into strips.
  • Wash the spinach
  • Finely chop the dill and the chive
  • Clean the pomegranate

1. Put all the ingredients in a salad bowl and mix together.

2. Add the sauce and spread the pork delicately on top.

*The pork can easily be substituted by chicken strips of veal depending on ones taste.
